Kitchen Sink: Lisa Prince shares a favorite (and easy) ice cream recipe

Homemade ice cream is a perfect summertime treat for keeping cool, and making this creamy and delicious dessert requires only a few ingredients. Plus, you can make any number of flavors with the availability of so many locally grown fresh fruits. Peach is one of my personal favorites.

Many people might not realize that North Carolina has more than 300 commercial dairy farms producing fresh milk and milk products. Milk production in 2005 was estimated at nearly 119 million gallons, and making homemade ice cream is a great way to support our dairy industry!

Here’s my favorite recipe for homemade vanilla ice cream that is very easy to make. I think it tastes more like snow cream. Enjoy!

Homemade Vanilla Ice Cream

  • 2 (14-ounce) cans of sweetened condensed milk
  • 1 quart half-and-half
  • 1 tablespoon plus 1 teaspoon vanilla extract
  • Whole milk to bring your freezer to the freezing line if recommended

Stir together all ingredients, mixing well. Pour mixture into freezer can of a 1-gallon hand-turned or electric freezer. Freeze according to manufacturer’s instructions.

Pack freezer with additional ice and rock salt; let stand 1 hour before serving (optional).

Note: If adding fruit, chop fruit to desired size and add just before freezing.
