In the Kitchen with Brian and Lisa: Fried summer squash panini

WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina.

This recipe is a great opportunity to use the panini maker you registered for, but probably have only used once. If you don’t have this specialized appliance, you also can use a griddle or large skillet. If you’re really in a pinch, you can try Brian and Lisa’s creative method for making these delicious grilled sandwiches using a pan, a brick and a plate. The sandwiches feature fried summer squash and zucchini, roasted red peppers, red onions, goat cheese and pesto. The recipe makes a satisfying sandwich.
