In the Kitchen with Brian and Lisa: Watermelon salad

By on August 11, 2011

WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina.

North Carolina farmers markets are full of two crops in August – watermelons and tomatoes. This recipe for watermelon salad combines the two in a summer side dish perfect for a backyard barbecue or dinner with friends. To make the recipe, first cut and mix watermelon cubes, tomatoes and onions together in a bowl. Next, prepare a simple oil-and-vinegar dressing and coat the salad. Finally, top with feta cheese and serve. Lisa also recommends topping the dish with mint for an added burst of flavor.

According to the U.S. Department of Agriculture, North Carolina ranks 10th in the U.S. in number of farmers markets with 217 markets. You can find locally grown watermelons and tomatoes at some of those farmers markets and roadsides stands now. To find a location near you, go to www.ncfarmfresh.com.
