In the Kitchen with Brian and Lisa: Malted Milk Ball and Cashew Butter Pie

WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina.

While this dessert may not help you with your new year’s resolutions, it should come in handy when planning your new year’s celebration. Domino Ireland won first place in the Pillsbury Pet-Ritz Pie Baking Championship at the 2011 N.C. State Fair for this delectable Malted Milk Ball and Cashew Butter Pie.

As you would expect, the crust is a Pillsbury Pet-Ritz pie crust. The filling is a combination of cream cheese, heavy cream, marshmallow crème, cashew butter, fudge topping and finely chopped malted milk balls. If that’s not enough, the filling is poured into a crust between layers of cool-hardening chocolate fudge. The pie is placed in a freezer for an hour and served cold.

Brian and Lisa have made so many wonderful dishes this year using fresh, locally grown ingredients. Some of my favorites include rosemary shrimp skewers, watermelon salad, fried tomato sandwich, steak pizza and PB&P smokey mac & cheese.
