If you’re burned out on potato chips and fries, try this healthy alternative next time you need a side item. Lisa found this recipe for Curried Sweet Potato Salad in the Sugar Solution Cookbook. It’s low in sugar and full of complex carbohydrates. Start by peeling and cooking two pounds of sweet potatoes. Next, make the dressing by combining yogurt, light mayonnaise, brown sugar, curry powder and salt. Cover the potatoes with the dressing, then add pineapples and scallions to the dish. Finally, sprinkle N.C. pecans on top and serve.
