In the Kitchen with Brian and Lisa: Cucumber Feta Salad

By on July 26, 2012

WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina.

Lisa describes this recipe for Cucumber Feta Salad as delicious and fresh. It’s a great recipe for your homegrown cucumbers and would go great with grilled kabobs. To make, start by seeding and cubing a large cucumber. Combine the cubes with crumbled feta cheese, extra-virgin olive oil, dill and lemon juice. Season with salt and pepper. Before serving, sprinkle the top with thin strips of lemon zest.

If you’re not growing your own, you can find locally grown cucumbers for this recipe at farmers markets and roadside stands across the state. To find a location near you, go to www.ncfarmfresh.com.
