In the Kitchen with Brian and Lisa: Orange French Toast Casserole

WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina.

Brian and Lisa wrap up a month of egg recipes with this one for Orange French Toast Casserole. It’s perfect if you’re hosting brunch or need to feed a large group.

Several orange flavors appear in the casserole including orange peel, orange extract and orange juice. But don’t worry, Lisa says the flavor isn’t overwhelming. Instead, the final product has a subtle orange flavor that’s perfect for spring and summer. The casserole is topped with a mixture of N.C. pecans, butter, light brown sugar, light corn syrup and cinnamon.

    how many servings does this recipe yield? And any suggestions as to where to find Texas Toast? We are having a problem locating it. Thanks

    Monica, we asked Lisa Prince and this is her reply: “I have made this several times and I have found Texas Toast at Harris Teeter and Wal-mart. Usually on the bottom shelf on the bread isle. If the French Toast is your main entree then 8 servings. If you have it on a buffet or are taking it to a covered dish, 12-16 servings.”
